The trick to making perfect guacamole is using good, ripe avocados. How do you pick the right avocado? The ready-to-eat avocado feels slightly soft under your fingers when you press on its skin. If it’s very firm allow a few more days before eating.
Once you have cut your ripe-to-perfection avocado add a splash of acidity (lemon juice, vinegar) to balance its richness, plus XV olive oil, salt and pepper. You can add chopped cilantro, chiles, onion, and tomato, if you want. Use this creamy dip on tomatoes, salads, chips, crackers and so on.
Simple Guacamole: In a blender mix together: avocado, olive oil, mustard, vinegar, pepper and salt. Use this creamy dip on your salads, chips or crackers.
- 1 ripe avocado -
- 1/2 c. XV olive oil -
- 1 Tbs vinegar -
- 1/2 Tbs mustard -
- salt and pepper or paprika -
- opt. sesame seeds and chopped scallion -
cut avocado in small chunks and add to processor bowl
add lemon juice, olive oil,
salt and pepper and pulse
till it becomes creamy
serve on your favorite vegetables (here served with a black radish and purple daikon salad.
