- 1 1/4 pounds short pasta - farfalle, penne, casarecce, zita cut, etc.
- 2 pounds tomatoes, halved, thinly sliced -
- 2 6-ounce cans solid white tuna packed in oil, drained, separated into chunks -
- 1/2 cup extra-virgin olive oil -
- 1 large or 2 small garlic cloves, minced or whole -
- 3 large bunches fresh basil -
- salt, pepper (black or red) - tt
put water to boil, add salt (water has to taste salty like sea water) and cover with lid
While you're waiting for the water to boil wash and finely slice tomatoes, peel the clove(s)
in a large skillet warm oil and garlic ( the garlic can be whole or chopped but do not let it burn!), add cut tomatoes, salt and pepper and cook for about 6-8 minutes till tomatoes get saucy and mushy
while the sauce is cooking remove the basil leaves from their stems, take tuna out of the tins and drain the liquid and add some (XV) olive oil to the tuna instead
water is boiling: add pasta, mix and cook al dente
drain pasta and add to the sauce, mix
add your basil leaves (be generous with the basil!) and add tuna to the saucepan as a last ingredient or directly on each plate before serving
