Apple Raisin Cake of Grandpa – Torta del Nonno

It takes a few minutes to prepare this delicious, moist, perfect apple cake. The secret? very little flour and lots of apples! Stick with me : )

Ingredients

  • g. 120 unbleached flour

  • 4 big apples green or yellow

  • g. 100 softened butter

  • g. 100 lukewarm milk

  • g. 80 sugar

  • g. 10 baking powder

  • vanille extract

  • lemon zest and lemon juice of 1 lemon

  • 1 egg

  • 1 pinch salt

Directions

  • Butter the bottom of your baking pan and cover with parchment paper.
  • Measure and weigh all ingredients. In a large bowl add dry ingredients: flour, sugar, baking powder and salt. Add extract, lemon zest and slightly scrambled eggs.
  • In another large bowl slice apples, add raisin and lemon juice. Mix well. Lemon juice prevents apples to oxidate.
  • Add apples and raisin to the batter. Mix. Add to the baking pan
  • Bake at 375 F. for about 60 minutes.
