Tagliatelle Peas and Bacon.

Tagliatelle 🍝 with english peas, bacon🥓 and parmigiano🧀….just perfect!
Home-made or from the store, Tagliatelle are everytime a wonderful entreé that pleases all palates and ages.😋

RECIPE  for 4 👬👭 ♡vegetarians just skip bacon 🙂

300 g. Dry Tagliatelle 🍝
150 g bacon or guanciale🥓
1 onion or shallot🧅
250 g frozen or fresh peas
XVOO 
Parmigiano t.t.🧀
1 egg🥚
Black pepper 

Directions

  • Slice bacon in small pieces and sauteé until crispy and it releases fat.  Remove from pan and in the bacon fat simmer the chopped or finely sliced onion until soft.
  • In a separate pot boil frozen peas until soft. Add cooked peas to onions. Add salt. While the tagliatelle are boiling in salty water, mix grated parmesan, ground black pepper and one egg until creamy.
  • Save some pasta water to add to the cheese/egg sauce and add peas, sauce and bacon to the Tagliatelle “al dente”.
  • Move to a big pan and mix on low gas or with burner off.
    Add more freshly grated cheese to taste.🧀
