Basic Pie Dough – Pastry for Quiche

Use this basic pie dough for all your savory cakes and quiches.  Using cold ingredients and equipment is highly recommended. It’s also important not to over-work the dough when kneading as it will make the pastry sticky. 

The Recipe

Ingredients

  • unbleached all-purpose flour 1 1/4 cups

  • chopped butter 3 oz

  • egg yolk (opt.) 1

  • iced water 2-3 tbs

  • salt a pinch

Directions

if you don’t have a food processor, use a knife to cut the butter and use your hands as little as possible to knead the dough until it comes together…it’s never too late to buy a food processor (they’re quite inexpensive and so time-saving)

Place flour, salt and butter in the bowl and process for about 10/15 seconds until it resembles coarse breadcrumbs.

add water (and egg yolk) and process until the dough just starts to come together. Turn the dough onto a lightly floured surface and knead lightly until smooth.

Shape into a ball, wrap in plastic, and place in the fridge for 30 minutes to rest.
