Chickpea Burgers with Couscous and Spinach

An easy and nutritious recipe that kids will find delicious and is ideal for their lunchbox. Thanks to the garbanzo beans these burgers are rich in vegetable proteins and fiber, both indispensable for a healthy intestinal microflora. photos by coco zordan

Ingredients

  • cooked chick peas 1/2 lb (1 small can)

  • cooked spinach 1/2 lb

  • couscous 1 cup

  • water or broth for the couscous 2 cups

  • bread crumbs or grated parmigiano cheese if needed

  • sage,rosemary and thyme (or basil + italian parsley)chopped to taste

  • salt and pepper to taste

COUS COUS:Put water to boil, add 1 tsp. salt, 1 tbs. oil. When the water starts to boil add cous cous, stir,cover with lid and remove from the stove. let it rest for 10 minutes.

Add the garbanzo beans (cooked and drained) and mash it all with a fork.

Chop the cooked spinach and add it to the mixture. Mix well and season with salt,pepper and herbs.

Take a small ball amount from the mixture and shape into a flat burger. If the mixture is wet  add some grated cheese or bread crumbs.

Put the burgers on a tray and into the oven at 4oo* for about 20 minutes or till golden brown.

Delicious alone they can also be served with cheese, fava bean dip or prosciutto.
