Christmas-Tree Cake – Pandoro

Pandoro is a traditional sweet bread from Verona, golden in color because of the large amount of egg yolks used, there are no nuts or dried fruit like in Panettone and it’s baked in a star shaped mold. It’s sold almost everywhere during the holidays. You can find it along with Panettone at most supermarkets, pastry shops and Italian markets.

Horizontally cut the Pandoro gives you beautiful star shaped slices that you can now layer with mascarpone  cream, whipped cream or custard, you can also flavor it with Amaretto, Limoncello, Rum,  chocolate, whatever you so desire.

The Recipe

Ingredients

  • 2 lb. Pandoro (powdered sugar included in the box)

  • Filling (see recipe in separate post)
  • 1/2 lb mascarpone cheese at room temperaure

  • 2-3 tbs sugar

  • 3-4 yolks

  • 2-3 egg white

  • 2-4 tbs cognac or rum, or other liqueur

Open the box from the bottom. Keeping the cake in the bag add the powdered sugar, close the bag and shake it till the sugar is evenly  spread all over.

Remove from bag and slice the Pandoro horizontally.

Place the largest slice on the dish and add the next slice so that the star edge ends in between the edges of the slice underneath. Continue staggering the slices until you reach the top.

By doing so you’ll obtain a beautiful X-mas-Tree shape that you can now embellish by adding, to each slice, whipped cream or  mascarpone cream;

you can also flavor it with Amaretto, Limoncello, Rum,  chocolate, whatever you so desire. NOTE: This can be made a few hours ahead of time and kept in a cool place.
