Irresistible Chia Seed Pudding

Chia is a super food which I wasn’t very familiar to till I had to introduce it into the family diet when my daughter became intolerant to gluten.  Not only it has become part of our daily menu but also the main ingredient of one of our favorite desserts.

The Recipe

Ingredients

  • chia seeds 1/2 cup

  • milk or almond milk 2 cups

  • honey or maple or agave syrup 2 tbs.

  • vanilla extract 1 tsp.

  • top
  • sliced seasonal fruit

  • almonds or other nuts

Directions

DSC08443 DSC08445 DSC08449Combine almond milk, chia seeds, vanilla and sweetener in a bowl.

Mix well until combined and the mixture begins to thicken. Store covered in the refrigerator overnight or for at least 3-4 hours (till the chia completely absorbs the milk).

Stir well before serving and add a bit of water to the pudding if it becomes too thick. Top with fresh fruit and nuts
