Roasted Cauliflower with Onion, Raisin and Capers

This is a brilliant idea to cook cauliflower, an easy way to improve the taste of this Cruciferous vegetable which, on its own, doesn’t have much of it. If you’re on a low-calories diet or you just want to eat healthier this is your recipe. (recipe from my friend  Maddalena G.)

Cauliflower is low in fat, low in carbohydrates but high in dietary fiber, folate, water, and vitamin C, possessing a high nutritional density.Cauliflower contains several phytochemicals, common in the cabbage family, that are beneficial to human health.

The Recipe

Ingredients

  • cauliflower 1 medium

  • white or red onion 1 big

  • capers under salt 1 tbs, (10-15)

  • raisin 1/4 cup

  • extra-vergin olive oil 2-3 tbs.

  • salt and pepper

Directions

Oven at 375* F.

Wash and cut in small pieces the cauliflower. Toss the florettes on an oven liner. Sprinkle with some salt and black pepper. Put them  in the oven for 40/50 minutes. Give them a nice mix after 30 minutes and then back in the oven till they turn brownish.

while the cauliflower is baking in the oven, slice the onion, cover a large medium pan with oil, add the previously rinsed capers, the raisins and the onion. Simmer covered for 10/20 minutes. Stir once in a while to check it doesn’t burn.

when ready add the florets to the pan Adjust of salt, pepper and oil.

Serve with your favorite grains (here’s shown with brown rice)
