Simple Brown Rice Soaking

WHY SOAKING?

Soaking is a centuries-old method that helps to breakdown the antinutrients and hard-to-digest components of grains, and at the same time, helps to release highly beneficial nutrients. For more about the whys and hows of soaking, please check out “How to Soak Grains for Optimal Nutrition.”

Soaking grains in an acid medium at a warm temperature – also activates phytase thereby helping to release important vitamins, as well as making grains, seeds and beans more digestible. In addition, soaking helps to reduce, or even eliminate phytic acid.

Ingredients

  • brown rice 2 cups

  • warm water enough to cover by an inch the rice

  • lemon juice or apple cider vinegar 1/2 lemon or 2 tbs

  • salt 2 pinches

Directions

Simple Soaked Brown Rice

The general rule is to add enough warm water to cover the rice, and then add a small amount of an acid medium (lemon juice or apple cider vinegar)  to every one cup of grain.  Then tightly cover and soak overnight (or up to 24-hours). Then be sure to drain, rinse the rice well before cooking it.

  1. Add above ingredients to a medium ceramic (or glass) mixing bowl and thoroughly combine.
  2. Cover the bowl and place it in a warm area of your kitchen overnight (8-12 hours).

3. After soaking time is completed, drain mixture using a fine-mesh strainer and gently rinse.
