Spaghetti with Garlic, Italian Chili and Parmesan Cheese

A minimalist but incredibly satisfying dish. A pasta recipe with ingredients that you have most of the time available in your kitchen: garlic, extra vergin olive oil, spaghetti and parmigiano cheese. Make it sure to cook the spaghetti “al dente”. photos coco zordan

Ingredients

  • spaghetti 1 box

  • garlic 2-4 cloves

  • XVOO 2/3 cup

  • grated parmigiano cheese 1 cup

  • coarse Kosher salt about 1/2 cup (taste water)

  • fresh chopped italian parsley (or basil) 1/4 cup

  • opt. red hot pepper (italian chili) TT

  • opt. cherry tomatoes 6-10 or more

bring water to boil in a big pot  and add enough salt to make the water pleasantly salty (Note: you can add some oil to the water to prevent the spaghetti to stick together). While water is cooking put a small pot or skillet with XVOO, garlic, chili and some salt on low. Let the olive oil simmer while the water is getting to a boil (don’t burn the garlic)

when the water comes to a boil add the spaghetti and keep stirring till water comes to a boil again.

drain the spaghetti in the colander, move it to a big bowl, add the oil with garlic and chili first ,mix, and then the parsley and cheese.

If you’re adding the tomatoes sprinkle some fine salt on them.

serve immediately while still hot.
