Tuscany Farmer's Soup – Zuppa del Contadino

Last week I looked in my fridge and I found: some sautéed mushrooms, some boiled cannellini beans and one head of raw broccoli. “This is perfect! – I thought – I’ll make a delicious tuscany-style soup”. Please feel free to modify this recipe according to your leftovers: you might miss the mushrooms but you might have some boiled potatoes, or leeks and zucchini etc.. Just add some chicken or vegetable bouillon and it’s done. Do you prefer it gluten-free? instead of bread slices add some cooked rice.

The Recipe

Ingredients

  • red or golden chopped onion 1

  • XVOO 3 tbs

  • sautu00e9ed mushrooms 1 cup

  • cooked (cannellini) beans 1 or 2 cups

  • (raw or cooked) broccoli about 1 lb

  • bouillon cube 1 x 4 cups of water

  • salt to taste

  • before serving add
  • bread 1 or 2 slices each dish

  • grated (parmigiano) cheese to taste

  • freshly ground black pepper to taste

  • XVOO to taste

Directions

cut broccoli into small florets and wash, if broccoli are already cooked add them to the soup when you add the beans

in a pot sautée the chopped onion with some XVOO till golden brown, add sautéed mushrooms

add the raw broccoli florets, add water and bouillon cubes.

Cover and  let it simmer for 10/15 minutes (till broccoli becomes soft). Add beans and serve with some rustic bread, freshly grated cheese and  XVOO. Slurp on.
