Chocolate Amaretti Cake with Pears

Monday was my husband’s birthday and he asked me for a cake with chocolate and pears. I went through my mom’s recipes and I found this delicious recipe I had forgotten about. It’s quite easy but the result is really sophisticated (thanks to the amaretti flavor) and just amazing! it gets even better after one day or two. Ingredients

  • g 180 softened butter let the butter outside the fridge a couple of hours before

  • g 180 sugar

  • 3 eggs

  • g 140 flour (unbleached or regular)

  • g 8 baking powder

  • g 100 almond flour

  • 160 g crumbled amaretti buy at any Italian store or on line

  • g 150 chopped unsweetened chocolate

  • 3 ripe pears in small chunks or sliced

  • pinch of salt

  • lemon or orange zest of 1 lemon or 1 orange

  • 1 or 2 tsp cinnamon or 2 sticks in pieces

  • x-powdered sugar for dusting about 1 Tbs

Directions

Butter at room temperature until softened. Weigh and prepare all ingredients and preheat your oven to 350/375F. In your mixer bowl add the softened butter, the sugar and the zest, until the batter gets creamy and foamy. In the meantime finely chop the dark chocolate

crumble the cookies  (you can smash them in a ziploc bag), and cut the pears (slices or small cubes)

grease the inside of a 24 cm spring form, mix the 2 flours with the baking powder and the cinnamon,

add the eggs, one by one, to the batter, keep mixing until the eggs are completely absorbed, then add the flours with the baking powder and mix with a spatula or wooden spoon. The batter is ready, we can now start making the cake layers

Spread half batter on the bottom of the form,  add the chopped chocolate, then the pears, then half amaretti,

then delicately spread the rest of the batter  without dragging the crumbled cookies, and lastly add the rest of the cookies on the top

We are ready to bake it in a hot oven at 170 ° C for about 50-60 minutes. Remove from oven and let completely cool before sprinkling the top with powdered sugar
