Kale, Potatoes Salad with Anchovies

I LOVE this food blogger! She’s absolutely my favorite! Her name is, Ada Parisi, a Sicilian journalist who lives between USA and Italy who daily posts and writes about the most amazing Italian food on her website and Instagram  Most of her recipes are incredible although sometimes hard to make because of their hard-to-find ingredients, but this one is easy to replicate given its simple ingredients: kale, potatoes, anchovies, garlic, and lemon zest. I’m sure everyone has  them in the kitchen. Also the procedure of the recipe is simple but the taste is amazing thanks to its perfect combination of ingredients!

The Recipe

Ingredients

  • 2 bunch kale without stem

  • 1 lb potatoes

  • 2-4 anchovy filets

  • 2 clove garlic

  • freshly grated lemon zest

  • italian hot pepper peperoncino

  • XVOO

  • salt and pepper

  • optional
  • 4 eggs

  • or salmon

remove leaves from stem, wash throughly

place a large pot of salty water to boil, in another pan on low/medium add the XVOO, the anchovy filets, the hot pepper, and the garlic (you can smash the cloves or chop them finely if you like it more “garlicy”). Turn the gas off once the filets are melted.

peel, wash, chop potatoes and add to the boiling salty water. Let them boil for about 7-8 minutes

add kale, cover and let cook for more 5 minutes

drain the veggies, add to the saucepan, and sautee’ on med/high for about 5/6 minutes to gain flavor

add lemon zest before serving
