Pizza 4 Formaggi (Four-Cheese Pizza)

The Pizza Quattro Formaggi is the ideal recipe for leftover cheese.  The four cheeses I listed in the ingredients below are a suggestion but you can use any  cheese you like or you’ve got in your fridge …. although Parmesan and Mozzarella are warmly recommended 🙂

Ingredients

  • 10/11 oz dough (300 grams)

  • some flour (to roll out the dough)

  • 1 cup (plain) tomato sauce

  • 2 oz gorgonzola (or blue cheese)

  • 2 oz fontina

  • 3 oz mozzarella (Polly-o or Galbani)

  • 2 oz grated parmesan cheese

  • 2 Tbs XV olive oil

  • salt and pepper (or paprika)

  • 2-3 leaves fresh basil (or oregano)

Directions

  • Preheat the oven to 425 degrees.

  • Roll out pizza dough  (see recipe) on a lightly floured surface to 10-12 inches.
  • Place on lightly greased baking sheet
  • Pinch up the dough edges to make thin rim.
  • uniformly distribute tomato sauce over dough (opt. add little salt)
  • drizzle dough with some XV olive oil
  • scatter chopped blue cheese, fontina, mozzarella over dough.
  • Sprinkle the grated parmesan over.
  • Bake for 15-20 minutes, until crisp and golden and the cheese is bubbling.

  • Serve immediately with some grind black pepper  or ‘peperoncino’ if desired.
