Quick Salad with Tuna, Potatoes, Scallion and Mayo

Served cold or warm it’s a beautiful and  healthy salad for any season. This tasty and easy quick salad with tuna, potatoes and onions comes particularly handy if you don’t have so much time to spend in the kitchen. Excluding the time of cooking of the potatoes, that can be done at any time of the day, this salad requires just a few minutes preparation.

The Recipe

Ingredients

  • 2 lb red potatoes

  • 10 oz tuna (in oil)

  • 2-3 scallions or 1 red onion

  • 2 Tbs chopped parsley

  • 1 or 2 Tbs mayo

  • for the Vinaigrette Dressing
  • 1 tsp vinegar

  • 1/2 c oil

  • 1 Tbs Grey Poupon Dijon Mustard

  • 1 Tbs water

Directions

  • Thoroughly wash the potatoes under running cold water.
  • Put in a steamer and cook for 40 minutes, or boil them for 30 minutes in salted boiling water. Prick with a skewer to check if they’re well done: the skewer will go through effortlessly if the potatoes are completely cooked.
  • When the potatoes are ready, remove them, let them cool down, remove the skin  (if the potatoes are very small you don’t need to remove the skin)  and cut in thick slices.
  • In a small bowl combine olive oil,vinegar and mustard (vinaigrette).
  • Place the potatoes in a dish, season with the vinaigrette, a pinch of salt, chopped parsley and scallion (or chive or garlic).
  • Open the tuna can discard oil and dispose tuna in the center and decorate with your favorite mayo. It can be served both cold and warm.
