Summer Fresh Peach Cake

Summer Peach Cake is a delectable summer dessert recipe featuring fresh sliced peaches sunken into a sweet golden cake!photos coco zordan

The Recipe

Ingredients

  • 5 ripe peaches chopped in small pieces

  • 300 gr flour sifted

  • 150 gr. softened butter

  • 4 eggs room temperature and the yolks separated from the whites

  • 1 lemon zest

  • 1 tsp vanilla extract

  • confectioner’s sugar for the top

  • 2 tsp baking powder

  • 1 pinch salt

  1. Peel and slice or cut each peach into small chunks and keep some slices for decorating. Grease and flour your cake pan or cover with parchment paper. Position rack in center of oven and preheat oven to 350/375°F.

In a large bowl, whisk together eggs, sugar and a pinch of salt; use an electric mixer to mix until light and fluffy. Add the soft butter and mix until creamy.

Add zest and vanilla. Turn down the mixer and with a spoon or spatula slowly blend in the flour

in a small bowl whip the whites until hard and gently blend into the batter

Scrape the batter into the springform pan and smooth the top.

With your fingers push down the cut peaches  and arrange some slices on top of the batter lightly pressing them down. Bake for about 40 minutes at 350/375°F. After 40 minutes do the test with a toothpick inserted into the center of the cake (hopefully without hitting a peach). My cake needed almost 60 minutes but it depends on your oven and on your pan size/shape.

Place the pie  on a rack and allow to cool completely. Sprinkle the top of the cake with some confectioner’s sugar.

Slice into wedges and serve with fresh whipped cream or vanilla ice cream or perfectly plain. Sprinkle the top of the cake with the sparkling sugar. Buon Appetito with the Summer Fresh Peach Cake!
