“Abra” Vinaigrette (with Mustard)

cake

I learned how to make this dressing from my friend Angelo (who owns a Restaurant in Antigua called Abracadabra) almost twenty years ago. It’s one of the easiest and most delicious salad dressings perfect for any salad!

In a bowl mix vinegar  and mustard well.  Add a bit of oil and whisk till absorbed by the emulsion. Add more oil and whisk till absorbed. Repeat till all oil is incorporated and the emulsion looks like a mayonnaise. Add water to make it easier to pour. If you like to add some dry oregano do so at the end when you have stopped mixing. Oregano can become bitter if whisked.
